2-3 pounds of yams
1/2 cup (1 stick) butter
1 cup light brown sugar
1/2 cup orange juice
cinnamon (optional)

Bake yams; cool, peel and cut into 1/2-inch thick slices. In a saucepan, melt butter; add brown sugar and orange juice. Bring to a boil, then reduce heat and simmer 5-10 minutes, or until slightly thickened. Arrange slices of yams in casserole; pour glaze over yams and sprinkle
with cinnamon, if desired.
